Ingredients
500 grams of mashed potatoes
1 large egg, lightly beaten
½ cup of grated cheese
Cubes of soft cheese like mozzarella or cheddar
Salt and pepper to taste
For the coating
2 large eggs, beaten with two tablespoons milk
1/2 cups all-purpose flour
Breadcrumbs
Coconut oil for frying
Method
Combine the mashed potatoes with the beaten egg, cheese, salt and pepper.
Divide the mixture into 15 to 20 croquettes.
Cut the soft cheese into 1/2 inch by 1 1/2 inch rectangles.
Roll the croquettes into an oval shape and make a space in the center with your fingers.
Place the soft cheese inside and then shape the potato over the cheese to cover it.
Get your mother to help you prepare 3 shallow bowls, one with flour, egg wash in the second, and breadcrumbs in the third bowl.
Roll each croquette, one by one in the flour, and remove excess flour.
Then dip each floured croquette in the egg wash and roll in the breadcrumbs.
With the help of your mom pour oil into a deep frying pan at least 1 1/2 inch deep.
Also prepare a baking tray topped with paper serviettes.
Once the oil is hot with the help of your mom carefully start frying them in batches of 5.
Fry the croquettes, turning often, until golden brown, then place on the prepared tray.
Let it cool a bit and eat while it’s crisp and hot.
